Apam Balik.

Ever since I've moved in with the housemates to this tiny but cosy house, I get to experiment with cooking a lot... and baking! Because we have an oven, like finally.

Well most of the things I made/cook were okay, as in, they tasted good but then it wasn't those restaurant standard dishes and they weren't even picture-worthy ):

But yesterday I made this malaysian peanut pancake which is just ... wonderful (sorry for being so thick-skinned hahaha) It's called "apam balik back home, and it's my all-time favourite food at Ramadan stalls. Housemates loved them too so I assume it's a pretty successful attempt at it. One of them thought I bought it from somewhere that's very flattering I must say.

I was craving for it so much the other night so I decided to google for the recipe, and stumbled across this lovely blog spicehunt.blogspot.com.

Fillings: crushed peanuts, sesame and sugar.

The batter.

And you're supposed to cook it with the lid on...

...until the surface bubbles.

Then spread the nut fillings (you're supposed to spread it evenly haha),
add bits of butter and creamy corns.

Cook for another few minutes, flip one half,
then brush a thin layer of butter on the surface, and voila you're done!

Slice them into pieces, unless you like eating the whole thing like that.
I didn't line them up properly for a picture hahaha. Was too hungry I guess.

:)
